How do you take a panoramic portrait with a professional digital camera?

I want the look of the famous city panoramics like of NYC that are about 3-4 feet long. I know there is a way, because they are sold all the time. I just want to be able to take my own with my Canon EOS 40 D. Is there a special lens I could get?
